Here I used a handful of chopped mature feta cheese, some mushrooms and a tomato. And I threw in some cooked chicken. I also put in the leftover ham which needed using up.
I skipped the pasta since I was feeling squeaky clean. :-)
The meal only took me about 10 minutes to prepare. But it tasted so yummy.
only regret is that I should have made more. But then I mustn't be too
greedy, must I? After all, I was comfortably full when I finished this
I didn't like feta cheese before. But I found myself growing fond of it over the last two years. Can't imagine why I didn't like it before.
It's funny how my tastes change as I get older. :-)
