High Protein ‘Pizza’ Omelette For
The Figure Conscious

This is a quick nutritious meal I prepare quite often. It looks very much like a pizza. But it tastes even better (in my unbiased opinion of course) and a lot more healthy. :-)

So, here are the ingredients I use.

  • 3 eggs, whisked with ½ teaspoon of salt (more or less salt according to your taste)
  • a handful of mushrooms, chopped
  • a handful of sliced tomatoes (more or less according to how big your pan or appetite is)
  • a handful of sliced onions
  • a small block of cheese, sliced (I usually use a matchbox size)
  • a teaspoon or two of cooking oil or a knob of butter


  1. Heat the oil or butter in a frying pan on a low to medium heat.
  2. Fry the onions till soft.
  3. Put mushrooms and tomatoes in and fry for a couple of minutes.
  4. Add the eggs and cook till it’s all nearly set.
  5. Just before the omelette is cooked, sprinkle the sliced cheese all over the omelette.
  6. It’s ready when the cheese is just melted.

If you’re skilful, try flicking the omelette to cook both sides evenly.

I used to do that. But it was a bit hit-and-miss. Very often, I ended up with a mess. But it didn’t matter. It was only me eating it. And it didn’t change the taste at all.

These days, I have a non-stick frying pan with a long steel handle. So, once the under-side of the omelette is set I can just slide the pan under the grill to finish it off. It makes life so much easier.
